 12 lemon balm tops

 16 garlic mustard leaves

 lots of chickweed

 8 violet leaves

 and finished with

 red clover blossoms

 dandelion and chicory flower petals

 mallow flowers

 Goldenrod (Solidago species)



I like to make a jar or two of goldenrod vinegar as a fall tonic. The taste is earth-y and pollen-y and sunshine-y. The goldenrod is a late fall favorite of so many insects, I figure it must offer something special to help us all through the winter that’s ahead. While goldenrod flowers do sometimes find their way into my salads, I find their texture less than friendly.

Elder Flower Champagne

 Elder Flower Champagne 


Harvest blossoms on a fine, hot June day, quick, quick, don’t wait; elder’s blooming period is fairly short. I learned how to make this in New Zealand twenty years ago and have made it yearly since. The best part? It is ready to drink in a few days. I share two recipes with you. Both are wonderful but they do taste slightly different.

Simply Living Elder Flower Champagne 

10 heads of elder flowers

4 lemons

1 heaping tablespoon of cream of tartar

2 cups white sugar

18 cups water


Grate lemon rind finely; only the colored part, not the bitter white part.

Then cut the lemons and squeeze the juice. 

Combine lemon rind, lemon juice, sugar, water, cream of tartar, and elder flowers in a plastic bucket or other non-metal container.

Cover loosely and leave for 24 hours, then strain, bottle, and cork. 

Ready to drink in a week!

Burdock

With so many abilities to offer, it is no wonder that burdock (Articum lappa) is a beloved ally of wise women and herbalists everywhere. Burdock's action is most profound on lymph, sweat, and oil glands, though its influence is felt in the liver, lungs, kidneys, stomach, uterus, and joints. Medicines made from the fresh burdock root are always preferable and superior to dried root preparations. Burdock is not for people in a hurry, or most acute problems; burdock works thoroughly and slowly.

 Use burdock root as a nourishing tonic, a skin clearer, a super cooler, a slick trick in the guts, and a guardian of your inner flows.

• Dose of fresh burdock root tincture is 30-240 drops a day, in water

• Dose of dried burdock root infusion is 1/2-2 cups/125ml-500ml a day.

• Dose of burdock root decoction is 1-9 teaspoons/5-45ml a day.

Drinking comfrey infusion has benefitted me in many ways: It keeps my bones strong and flexible. It strengthens my digestion and elimination. It keeps my lungs and respiratory tract healthy. It keeps my face wrinkle-free and my skin and scalp supple. And, please don't forget, comfrey contains special proteins needed for the formation of short-term memory cells. Comfrey (Symphytum) leaf is free of the compounds (PAs) found in the root that can damage the liver. I have used comfrey leaf infusion regularly for decades with no liver problems, ditto for the group of people at the Henry Doubleday Research Foundation who have eaten cooked comfrey leaves as a vegetable for four generations. Comfrey is also known as "knitbone," and no better ally for the woman with thin bones can be found.. Its soothing mucilage adds flexibility to joints, eyes, vagina, and lungs. Comfrey leaf infusion used internally and as a sitz bath is excellent at easing hemorrhoids .
